Breakfast Potatoes

Breakfast Potatoes

3 large potatoes, scrubbed and diced into 1/2 - 1 inch chunks. (Smaller is better!)

S&P

1 tsp minced garlic

Oil for frying


Rinse diced potatoes, then place in a sauce filled with water, season with salt. Bring to a boil. Let boil for 5 minutes. You want them softened, but not squishy.

Meanwhile, heat oil in deep fryer to 375.

After potatoes are done boiling, drain and return to same hot pot (NOT to hot burner!) to steam off excess moisture.

Fry in deep fryer 5 minutes, or until browned and crisped along the edges.

Drain on paper towels and season with S&P while still hot.

Serve hot.
